Quiche is commonly seen in cafes, but I find the quiches in Taiwan are usually served in small portion. The quiches in Lisbon and Belem are relatively gigantic! Despite the size differences, the quiches share a crusty pie crust, which is usually made of butter. In order to be consistent with my lean and healthy guideline, I find a crust recipe from The French Market Cookbook meet my needs. Clotilde Dusoulier replaces butter with olive oil. Ingredient <Pie Crust> 260g All purpose flour 60ml Olive Oil 60ml Cold water 1 egg 2 teaspoons of salt 1 table spoon of basil <Filling> 150g cream cheese 1 egg 1 tea spoon salt 1 table spoon basil 1 table spoon pepper Half tomato 10 mushrooms steamed chicken breast slices (optional) fresh basil leaves grated cheddar cheese Procedure 1. In a clean, big bowl, mix everything( for pie crust) together with a spatula and you get a dough. 2. Knead the dough with some extra flour until the dough can cover the pie plate. Cover the dough with a wrapper and store it in the fridge for at least 30 minutes. 3. For filling, whip together cream cheese and egg, add salt, basil and pepper. 4. Take out the pie dough. Glaze extra egg white on the surface, and bake the pie crust in a preheated oven in 160C for 30 minutes. 5. Take out the backed pie crust, and spread chopped tomato, mushroom, and other ingredient. Sprinkle over with grated cheese. 6. Pour the cream cheese mixture over the pie ingredients. 7. Bake the pie in a preheated oven in 180C for 30 minutes or until it turns golden. | 材料 <派皮> 中筋麵粉260克 橄欖油60毫升 冷開水60毫升 蛋1顆 鹽2茶匙 羅勒葉1大匙 <內餡> 奶油乳酪 150克 蛋1顆 鹽 1茶匙 羅勒葉 1大匙 胡椒 1大匙 番茄半顆 洋菇10顆 雞胸肉片(可不加) 新鮮羅勒葉 切達起司絲 做法 1. 在一個乾淨的大碗中將所有(做派皮的)材料用橡膠刮刀攪拌在一起就得到了麵糰。 2. 用份量外的手粉桿平麵糰直到能夠蓋住派盤。用保鮮膜蓋上派皮後放冰箱靜至至少30分鐘。 3. 餡料的部份,將奶油起司和蛋液打散混合,加入鹽、羅勒葉和胡椒。 4. 派皮取出。用份量外的蛋白刷在派皮表面,把派皮送進已預熱160C的烤箱烤30分鐘。 5. 將派皮取出,鋪上切碎的番茄、洋菇和其他食材。表面再灑上起司絲。 6. 將奶油乳酪混合液倒入派中蓋上食材。 7. 將派放入已預熱180度的烤箱烤30分鐘或是直到表面呈金黃色即可。 |
