Cinnamon Scone I wasn't into scone. I remembered my mom bought some couple of scones from a local chain bakery, and they tasted so dry and starchy. And for kid around ten or so, the scones tasted too plain -- not sweet enough. For years I didn't bother myself to have another bite or even to bake it. Recently our German reading group had our weekly reading session at a Cafe across campus. The scone were really soft, a little bit moisture, and most importantly they were warm. They were not too sweet either, but very aromatic with various herbs. I guess now I can finally appreciate this British dessert. I looked up the BBC Food for scone recipe (since it's British) and adapted/changed a bit. I don't have self-raising flour, so I replace it with plain flour with baking powder, and I make it cinnamon. And in the original recipe, an egg is used for glazing, but I won't use an whole egg so I replace it with a little milk. Ingredients: 225g plain flour pinch of salt 2 teaspoon baking powder 55g unsalted butter 25 g sugar 3 teaspoon cinnamon powder + a bit cinnamon sugar 150ml milk a little milk to glaze Preparation: 1. Rub with your hands mixing the butter and salt and flour. 2. Stir in the cinnamon and sugar, and stir with your hands. And add the milk to get a soft dough. 3. Put the dough on a floured work surface. Now roll the dough into a 5cm diameter roll. Cut the roll with knife, and each chunk will be about 1.5 to 2 cm thick. 4. Place the scone chunks on the baking sheet. Glaze the top of the scone with some milk. 5. Preheat the oven to 210 C, bake the scones around 15 minutes or till they turn golden. 6. Cool on a wire rack and serve immediately. (It will be better with a cup of tea!) | 肉桂司康 我對司康的興趣一直不大。我記得我媽以前在附近的連鎖麵包店買過一些司康,但是口感非常乾而且粉粉的。當時大概是十歲左右吧,對小朋友來說司康的味道實在過於平淡----不夠甜。這些年來我都沒有想要再嘗試司康甚至動手做。最近我們的德文讀書會在校園對面的一家咖啡廳開每週的讀書會。他們家的司康非常軟,有點濕潤,而且最重要的是司康都溫溫的。吃起來也不太甜,但是充滿了各式香草的香氣。我想我現在終於能欣賞這個英式茶點了。 (既然它是英國茶點)我就參考了BBC Food的司康食譜,並且稍微改編/改變他的做法。因為我沒有self-raising flour(*低筋麵粉混發粉,能夠自發的麵粉,通常美式點心比較少用到),於是我就用低筋麵粉混泡打粉,而且我想做肉桂口味的。原本的食譜使用蛋來刷麵團,但是我想我用不到整顆蛋,就用牛奶來刷。 材料: 低筋麵粉 225克 鹽 一撮 泡打粉 2茶匙 無鹽奶油 55克 糖 25克 肉桂粉三茶匙加上一點肉桂糖(較粗的肉桂) 牛奶 150毫升 額外一點牛奶來刷表皮 做法: 1. 用手將奶油跟鹽、麵粉揉在一起。 2. 攪入肉桂跟糖,然後繼續用手攪拌。加入牛奶攪拌之後成軟麵團。 3. 把麵團放在有撒麵粉的工作台,把麵團滾成直徑5公分的長條狀。用刀子切出厚度約1.5到2公分的司康團。 4. 把司康團放在烤紙上,用牛奶刷司康表面。 5. 預熱烤箱至210度,烤大約15分鐘,或是烤至金黃色。 6. 烤好後放在烤架上稍微待涼,即可享用。 (來杯茶會更好囉!) |
