At home we like to use bread machine to stir and knead the dough. It's time-saving and it does a better job than us, but we still have to raise the dough by ourselves. Therefore, no slide-show demo this time, and it's really easy to make focaccia. Ingredients: 400g Bread Flour 7g Salt 12g Sugar 1.5 teaspoon Olive oil 260 ml cold water (about 5C) 4g Instant dry yeast Extra: olive oil, olives, salt and rosemary Preparation: 1. Put everything into the bread machine to make the dough. It costs about 45 minutes. 2. Take the dough out. Sprinkle flour over the working platform and knead the dough to a little ball. Cover the dough and leave it for 10 minutes. 3. Knead the dough into a rectangle, baking sheet size, 1 cm thick. While kneading, sprinkling flour over the dough and reverse the dough again and again, so the dough won't squeeze back. 4. Put the dough on the baking sheet, cover it for 1 hour to prove the dough. 5. Preheat oven 170C. Uncover the dough, press little holes with finger. Spread olive oil, 1.5 teaspoon salts (depend on your preference), tuck olive into the holes, and finally sprinkle some rosemary. 6. Bake for 170C, 20 minutes. Wait till cool t cut the loaf. | 我們家做麵包都是使用麵包機來揉麵,比較省時也揉的比較好,不過發酵要自己來就是,因此這次沒有附上步驟圖,做法十分簡單。 食譜是參照麵包機建議的食譜,約製作900克的麵包。 材料: 高筋麵粉 400克 鹽7克 糖12克 橄欖油 1.5大湯匙 冷水 260毫升 速發乾酵母(大約5度) 4克 份量外:橄欖油、橄欖、鹽和迷迭香 做法: 1. 將所有材料丟入麵包機後等待麵團揉好,約費時45分鐘。 2. 將麵團取出,在工作台上撒上高筋麵粉,把麵團揉成光滑的圓形後,蓋上布讓麵團靜置10分鐘。 3. 麵團擀成跟烤盤差不多大的長方形,約1公分厚。擀的過程要反覆撒上麵粉,再擀,再翻面,這樣麵團才不會縮回去。 4. 擀好後放在鋪了烤紙的烤盤上,蓋上布,發酵1小時。 5. 發酵後,預熱烤箱170C,把布掀開,用手指壓出洞,刷上橄欖油、1.5小匙的鹽(可依喜好增減)、把橄欖肉塞進洞裡、最後撒上少許迷迭香。 6. 170C度烤20分鐘,烤完後稍微放涼再切。 |
