I have been studying all sorts of Western recipes these days, for I think it's time to move on to some salty cuisines for this winter break. Before entering into a much sophisticated stage, I would like to share this rum raisin, which is my parents' favorite treats. Ever since we bought a bread machine couples of years ago, our family were crazily in love with baking. One of the pastries this tough machine can make is pound cakes with dried fruits. However, only pouring these dried raisin can only bring you another dry pound cake. Rum makes the pound cake moisture and aromatic! Although bathing raisins in rum can't be said as a kind of smart recipe, but it's a smart tip that fits almost every desserts. Before making any doughs, bath the raisins in about 2 teaspoons of rum. Bottles of rum are quite easy to get, and Costco offers a family-size rum at a very delightful price. When the raisins are soaked with sweat rum and become kind of puffy, roll these raisins in your dough. You can put them in scones, pound cakes, waffles, sides for waffles, ice cream and so on. You can also scramble the rum raisins with cream cheese and a bit of sugar, and spread it over the bagels. Easy but classy. | 最近都在鑽研西方食譜,總覺得這冬天是時候來做點鹹的料理了。在進入比較複雜的料理階段前,我想要分享我爸媽喜歡的萊姆酒葡萄乾。自從我們幾年前買了麵包機以後,我們家超愛做烘培。這檯勇猛的機器能做的甜點就是乾果磅蛋糕了。但是只有放葡萄乾實在是讓磅蛋糕乾到不行。加了蘭姆酒能讓蛋糕濕潤又有香氣!儘管只不過是把葡萄乾泡進萊姆酒而已不太算是什麼能說嘴的食譜,但的確是個幾乎每樣甜點都是用得撇步。 在做任何的麵團之前,將葡萄乾泡入約兩茶匙的蘭姆酒。瓶裝蘭姆酒不難找, 好事多就有賣家庭號的,價格也十分親民。當葡萄乾泡在甜蘭姆中並且變得有點泡泡的,就把葡萄乾卷到麵團裡。這些可以拿來放入司康、磅蛋糕、鬆餅麵團,或是拿來配鬆餅、冰淇淋等等的。也可以將蘭姆葡萄打入奶油起司中,加入少許砂糖,然後當作貝果的抹醬。簡單但經典。 |
